Mistress Lovejoy's Kingston Conserve

Ingredients

• 1 cup shredded coconut
• 4 cups sugar
• 1 ½ pounds ripe cooking apples
• 1 large orange
• 1 large pineapple
• ²/₃ cup Demerara rum

Grind pineapple and orange together in a meat grinder, using the coarsest blade. Place all the fruits in a large pot, add the sugar and bring to a boil, stirring until the sugar dissolves.
