Mixed Greens with Plums and Parmesan Cheese


  • Salt and freshly ground pepper
  • 2 ounce(s) Parmesan cheese
  • 2 tablespoon(s) fresh lemon juice
  • 0.25 cup(s) extra-virgin olive oil
  • 0.5 pound(s) mixed salad greens
  • 6 ripe plums

In a large bowl, whisk the lemon juice with the olive oil and season with salt and pepper. Add the plums and any reserved plum juices and let stand for 5 minutes. Add the mixed greens and Parmesan, season with salt and pepper and gently toss. Serve the salad right away.
