Ingredients

  • 3 whole cloves
  • 1 cup uncooked basmati rice
  • ¼ teaspoon freshly ground black pepper
  • 2 cups water
  • 1/3 cup finely chopped carrot
  • ¾ cup frozen green peas
  • 1 ½ teaspoons cumin seeds, divided
  • + 12 more ingredients
    • 1 ¼ teaspoons kosher salt, divided
    • ¼ teaspoon garam masala
    • ¼ teaspoon coriander seeds
    • ¾ pound red potatoes, cut into 1-inch pieces
    • ¼ teaspoon black peppercorns
    • 2 tablespoons canola oil
    • 4 green cardamom pods
    • ½ pound green beans, trimmed and cut into 3/4-inch pieces (about 2 cups)
    • 1 bay leaf
    • 1 cup sliced red onion
    • ½ teaspoon ground turmeric
    • 2 dried red chiles
