Ingredients

  • ¾ cup whole milk
  • ½ cup whipping cream
  • Nonstick vegetable oil spray
  • 1/3 cup unsweetened cocoa powder (preferably Dutch-process)
  • 1/3 cup water
  • 2 cups whipping cream

    • 18 tablespoons sugar
    • 5 tablespoons unsalted butter
    • 1 9-ounce package chocolate wafer cookies
    • 2 extra-large egg yolks
    • Chocolate coffee bean candies
    • 1 teaspoon vegetable oil
    • 2 teaspoons instant espresso powder
    • 8 ounces bittersweet (not unsweetened) or semisweet chocolate
    • ½ teaspoon vanilla extract
    • 1 teaspoon light corn syrup
    • ½ cup walnuts
    • 1 8-ounce package cream cheese
    • 2 tablespoons chocolate liqueur (such as dark crème de cacao)
    • 2 teaspoons vanilla extract
    • 4 extra-large eggs

Position rack in center of oven and preheat to 350°F. Spray 10-inch-diameter springform pan with vegetable oil spray. Wrap outside of pan tightly with double layer of heavy-duty foil.
