Ingredients

  • 2 ounces fine-quality bittersweet chocolate (not unsweetened)
  • 2 large egg yolks
  • 2 ½ tablespoons sugar
  • ½ teaspoon salt
  • ¾ cup whole milk
  • ½ tablespoon Ta Maria or other coffee liqueur
  • 1 teaspoon instant-espresso powder

    • 1 pastry bag fitted with 1/2-inch star tip
    • ½ cup unsalted butter
    • ½ tablespoon unsalted butter
    • ½ teaspoon vanilla
    • 1 ½ tablespoons cornstarch
    • 1/3 cup sugar
    • 1 large egg
    • 1 ¼ cups all-purpose flour

Beat together yolks, sugar, cornstarch, and a pinch of salt in a bowl with an electric mixer until thick and pale, about 1 minute.
