Mock Caprese Salad
- 2 tablespoons balsamic vinegar (optional)
- freshly ground black pepper to taste
- ½ teaspoon salt
- 1 tablespoon chopped fresh basil leaves, or to taste
- 2 tomatoes, chopped
- 1 cup fat-free cottage cheese
1. Combine cottage cheese, tomatoes, basil, salt, and black pepper in a bowl. Stir in balsamic vinegar.
