Mommy's Watermelon Rind Pickles

  • 2 cups sugar
  • 2 teaspoons cracked allspice
  • 2 (3-inch) cinnamon sticks
  • 1 lemon, thinly sliced
  • 1 teaspoon whole cloves
  • ½ cup salt
  • 2 ½ quarts water, divided
  • + 3 more ingredients
    • 1 large watermelon, quartered
    • ½ cup balsamic vinegar
    • 1 ¾ cups cider vinegar

Cut pulp from watermelon rind, leaving a small amount of red pulp on rind. Reserve pulp for another use. Cut rind into 1-inch cubes, and place in a large bowl. Stir together salt and 2 quarts water.
