Momofuku Corn Cookies


  • 1 cup (2 sticks) unsalted butter, room temperature and cubed
  • 1 ½ cups granulated sugar
  • 1 egg, room temperature
  • 1 1/3 cup all-purpose flour
  • ¼ cup corn flour (NOT corn meal – there is difference so check the label!)
  • 1 ½ teaspoons kosher salt
  • ¾ teaspoon baking powder

1. Cream together the butter and the sugar until light and fluffy, about 3 minutes. Scrape down the sides of the bowl and add in the egg.
