Mom's Baked Rice Custard


  • 4 eggs, slightly beaten
  • ¼ cup(s) granulated sugar
  • ½ teaspoon(s) Salt
  • 1 1/3 cup(s) white rice, cooked per directions
  • ½ teaspoon(s) nutmeg
  • 1 quart(s) milk, scalded
  • ½ teaspoon(s) vanilla extract

In a large bowl, slightly beat eggs, add sugar and salt and mix well. Combine rice, nutmeg, milk and vanilla extract and add to the egg mixture gradually while stirring.
