Monterey Zucchini

Ingredients

  • 1 ½ cup(s) long grain rice (to make 3 cup cooked rice for recipe)
  • 1 can(s) chopped green chilies (7 ounce can)
  • 1 1 b good quality Monterey Jack cheese(or Fontina), coarsely grated
  • 3 zucchini, parboiled (1 min), sliced ¼ inch thick (medium)
  • 3 homegrown tomatoes, peeled & sliced (large)
  • 2 cup(s) sour cream
  • 1 teaspoon(s) dried oregano (or 3 T fresh marjoram)
  • + 4 more ingredients
    • 1 teaspoon(s) Garlic salt
    • 4 tablespoon(s) chopped green pepper
    • 4 tablespoon(s) chopped green onion
    • 2 tablespoon(s) chopped Italian parsley

Cook rice--just until barely tender-- in water that has been seasoned with 3/4 t salt. Drain and measure 3 C. Place in 9x13 casserole. Add layer of drained, chopped chilies.
