- 1 shallot, minced
- 1 ½ cups milk
- 6 tablespoons unsalted butter
- ½ cup heavy cream
- 2 tablespoons freshly grated Parmesan cheese
- 5 large egg yolks
- 1/3 cup all-purpose flour
