  • ¾ cup olive oil
  • 1 teaspoon ground cumin
  • 16 12-inch-long metal skewers
  • 2 tablespoons fresh mint
  • 2 teaspoons ground black pepper
  • 2/3 cup fresh lemon juice
  • Golden Couscous
  • + 7 more ingredients
    • 4 red onions
    • 32 whole dried apricots (preferably Mediterranean)
    • 6 large garlic cloves
    • 4 teaspoons grated lemon peel
    • 4 teaspoons salt
    • 2 teaspoons ground coriander
    • 4 pounds well-trimmed boneless leg of lamb
