New Potatoes with Balsamic and Shallot Butter

Ingredients

  • ½ teaspoon salt, divided
  • 1 ½ tablespoons finely chopped fresh parsley
  • 3 tablespoons finely chopped shallots
  • 1/3 cup butter, softened
  • 2/3 cup balsamic vinegar
  • 1/8 teaspoon freshly ground black pepper
  • 2 teaspoons chopped fresh thyme
  • + 1 more ingredients
    • 4 pounds small red potatoes

Bring vinegar to a boil in a small saucepan; reduce heat, and simmer until reduced to 2 tablespoons (about 10 minutes). Place in a medium bowl, and cool completely.
