  • 1 pound unpeeled large red-skinned potatoes
  • ½ cup grated Gruyère cheese
  • ¼ teaspoon ground nutmeg
  • 18 tablespoons whipping cream
  • 2 teaspoons olive oil
  • 1 8-ounce package cream cheese
  • 1 cup freshly grated Parmesan cheese
  • + 6 more ingredients
    • 1 tablespoon extra-virgin olive oil
    • 1 teaspoon salt
    • ½ cup onion
    • 6 cups water
    • 1 tablespoon fresh parsley
    • 48 6-inch skewers

Heat oil in heavy medium saucepan over medium heat. Add onion; sauté until soft, about 4 minutes. Reduce heat to low. Add cream, cream cheese, Parmesan, and Gruyère.
