Noodle-and-Cheese Pudding

Ingredients

  • ½ teaspoon salt
  • 2 large eggs, lightly beaten
  • Cooking spray
  • 1 cup 1% low-fat cottage cheese
  • 4 cups cooked medium egg noodles (8 ounces uncooked)
  • ½ cup packed brown sugar
  • ½ teaspoon ground cinnamon
  • + 5 more ingredients
    • ½ cup tub-style light cream cheese
    • 1 cup vanilla low-fat yogurt
    • 2 large egg whites, lightly beaten
    • ½ teaspoon vanilla extract
    • ½ teaspoon pepper

Preheat oven to 375°. Combine the first 10 ingredients in a large bowl. Add noodles, and toss gently to coat. Spoon noodle mixture into a 13 x 9-inch baking dish coated with cooking spray. Cover and bake at 375° for 1 hour. Serve warm or at room temperature.
