Noodles with Eggplant Sauce


  • 2 1-pound eggplants
  • 6 tablespoons olive oil
  • 1 pound fully cooked smoked sausage
  • ½ cup dry red wine
  • 12 ounces egg noodles
  • 3 small bay leaves
  • 2 cups canned crushed tomatoes with added puree
  • + 3 more ingredients
    • 2 teaspoons grated lemon peel
    • 2 medium onions
    • 2 tablespoons garlic

Heat oil in heavy large pot over medium-high heat. Add eggplant, onions and garlic and sauté until brown, about 12 minutes. Add sausage, crushed tomatoes, wine, bay leaves and lemon peel.
