North Woods Wild Rice Pancakes

Ingredients

  • 3 tablespoon(s) butter, melted
  • 3 Eggs
  • 1 teaspoon(s) baking powder
  • 1 ¼ cup(s) wild rice - cooked
  • ¾ teaspoon(s) salt
  • 3 cup(s) buttermilk or milk
  • 1 ½ teaspoon(s) ground nutmeg
  • + 3 more ingredients
    • ¼ cup(s) white sugar
    • 3 cup(s) flour
    • 1 teaspoon(s) vanilla extract

Whisk eggs, buttermilk or milk and vanilla in large bowl. In separate bowl, mix together flour, sugar, baking powder, nutmeg and salt. Slowly add dry ingredients to egg mixture and beat well. Stir in butter and cooked rice. Cook on skillet until browned. Serve with warm maple syrup!
