Nutty Pineapple Slaw


  • 1 tablespoon dry mustard
  • 1 (8-ounce) can crushed pineapple in juice, drained
  • 1 cup nonfat sour cream alternative
  • 3 tablespoons cider vinegar
  • 1 ½ cups shredded red cabbage
  • 2 tablespoons unsalted dry-roasted peanuts, chopped
  • ¾ cup chopped sweet red pepper
  • + 3 more ingredients
    • 1/8 teaspoon salt
    • 2 tablespoons sugar
    • 2 ½ cups shredded green cabbage

Combine cabbages and red pepper in a large bowl; toss well. Combine crushed pineapple, sour cream, sugar, mustard, vinegar, and salt in a small bowl, stirring well. Add pineapple mixture to cabbage mixture, and toss until blended. Cover and chill. Sprinkle slaw with peanuts just before serving.
