Nutty Pumpkin Bread Pudding

Ingredients

  • ½ cup(s) packed brown sugar
  • 4 cup(s) bread cubes
  • ½ cup(s) chopped pecans
  • ½ cup(s) raisins
  • 2 slightly beaten egg yolks
  • 1 cup(s) canned pumpkin
  • 1 tablespoon(s) cinnamon

    • 2 cup(s) milk
    • ½ cup(s) snipped dates
    • 2 stiffly beaten egg whites

Combine egg yolks, pumpkin, brown sugar, and spices. Stir in milk. Fold in bread cubes, pecans, dates, and raisins. Fold in stiffly beaten egg whites. Pour into a greased 10 x 6 inch pan.
