Nutty Raspberry Muffins


  • 2 c spelt flour or whole-wheat pastry flour
  • 2 t baking powder
  • ¾ t baking soda
  • ¾ t ground cinnamon
  • ½ t fine sea salt
  • 1 c pecans, coarsely chopped
  • 8 oz vacuum-packed soft silken tofu (such as Mori-Nu)

    • 2/3 c plain unsweetened soy milk
    • 2/3 c pure maple syrup
    • 1/3 c neutral cooking oil
    • 2 t apple cider vinegar
    • 2 t vanilla extract
    • 6 oz (1 container) fresh raspberries
