Nutty Raspberry Muffins
Ingredients
- 6 ounce (1 container) fresh raspberries
- 2 teaspoon vanilla extract
- 2 teaspoon apple cider vinegar
- 1/3 cup neutral cooking oil
- 2/3 cup pure maple syrup
- 2/3 cup plain unsweetened soy milk
- 8 ounce vacuum-packed soft silken tofu (such as Mori-Nu)
