Nutty Raspberry Muffins

Ingredients

  • 6 ounce (1 container) fresh raspberries
  • 2 teaspoon vanilla extract
  • 2 teaspoon apple cider vinegar
  • 1/3 cup neutral cooking oil
  • 2/3 cup pure maple syrup
  • 2/3 cup plain unsweetened soy milk
  • 8 ounce vacuum-packed soft silken tofu (such as Mori-Nu)

    • 1 cup pecans, coarsely chopped
    • ½ teaspoon fine sea salt
    • ¾ teaspoon ground cinnamon
    • ¾ teaspoon baking soda
    • 2 teaspoon baking powder
    • 2 cup spelt flour or whole-wheat pastry flour
