Oatmeal, Fig, and Walnut Bars

Ingredients

  • 1 cup chilled vegan "butter" (such as Earth Balance) or margarine
  • 6 tablespoons sugar
  • Pinch of salt
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup water
  • 1 ¼ cups (packed) dark brown sugar
  • + 9 more ingredients
    • 2 cups dried figs
    • 1 teaspoon vanilla extract
    • 1 cup powdered sugar
    • 1 ¾ cups old-fashioned oats
    • 1 cup walnuts
    • 2 teaspoons ground cinnamon
    • 1 ½ teaspoons fresh lemon juice
    • nonstick vegetable-oil spray
    • 1¾ cups all-purpose flour

Combine first 4 ingredients in heavy medium saucepan. Bring to simmer over medium heat, stirring until sugar dissolves. Reduce heat to low. Cover and simmer 5 minutes.
