Oatmeal Muffins 6

Ingredients

  • 1 cup(s) oatmeal
  • 1 cup(s) buttermilk
  • shortening (soft)
  • ½ cup(s) brown sugar (packed)
  • 1 egg
  • 1 cup(s) flour
  • 1 teaspoon(s) baking powder
  • + 2 more ingredients
    • ½ teaspoon(s) baking soda
    • 1 tablespoon(s) salt

Heat oven to 400° grease bottom. Soak oats in milk 1 hour. Mix shortening, sugar & egg. Measure flour. Blend dry ingredients. Stir in mixture rolled oats & milk. Fill muffin 2/3 full. Bake for 20-25 minutes. Makes about 12 muffins.
