Oatmeal Muffins with Walnuts

Ingredients

  • 1 cup quick cooking oats
  • ¾ cup oat flour
  • 1/3 cup sucanat
  • 1/3 cup chopped walnuts
  • ¼ cup arrowroot starch
  • ¼ cup ground flaxseeds
  • 1 tsp baking powder
  • + 6 more ingredients
    • ½ tsp baking soda
    • ½ tsp cinnamon
    • ¼ tsp sea salt
    • 1 cup full fat canned coconut milk
    • 2 tsp apple cider vinegar
    • 1 tsp vanilla extract

1. Preheat oven to 350F. 2. In a large bowl, combine dry ingredients together and toss. 3. In a smaller bowl, mix wet ingredients together and pour into the dry mixture. Mix until well combined. 4. Let the dough rest for 5 minutes. 5. Fill a muffin pan with the batter. 6. Bake for 20 minutes.
