Ingredients

  • 1 large egg
  • ½ teaspoon salt
  • Cooking spray
  • ½ teaspoon baking soda
  • ¼ cup butter, softened
  • 1 tablespoon powdered sugar (optional)
  • 2/3 cup packed brown sugar
  • + 6 more ingredients
    • 1 ½ cups buttermilk
    • 1 ½ teaspoons vanilla extract
    • ½ cup steel-cut oats
    • 1 teaspoon baking powder
    • 1 cup all-purpose flour
    • ½ cup oat flour

Combine buttermilk and oats; cover and refrigerate 8 hours. Preheat oven to 375°. Lightly spoon flours into a dry measuring cup; level with a knife.
