Old Durham Church Crab Cakes

Ingredients

  • 2 dashes hot sauce
  • 2 teaspoons salt
  • 2 pounds fresh crab meat, drained and flaked
  • ¼ teaspoon paprika
  • ¼ teaspoon pepper
  • 2 tablespoons minced onion
  • 2 cups soft breadcrumbs
  • + 5 more ingredients
    • 1 teaspoon dry mustard
    • 2 eggs, beaten
    • 3 tablespoons vegetable oil
    • 2 teaspoons lemon juice
    • ¼ cup mayonnaise

Combine all ingredients, except oil, mixing well; shape into 2 1/2-inch patties. Cover and chill at least 1 hour. Heat oil in a large skillet; cook patties over medium heat 8 minutes on each side or until golden brown. Drain on paper towels; serve immediately.
