Open-Faced Steak, Pear, and Gorgonzola Sandwiches

  • 1 teaspoon olive oil
  • Cooking spray
  • ¼ cup (1 ounce) crumbled Gorgonzola cheese
  • 1 pound flank steak, trimmed
  • 2 small Bartlett pears
  • 1 cup thinly sliced red onion, separated into rings (about 1/2 onion)
  • ½ teaspoon salt

    • ½ teaspoon freshly ground black pepper
    • 2 tablespoons white wine vinegar
    • 3 tablespoons bottled lemon juice, divided
    • 6 cups prewashed gourmet salad greens
    • 6 (2.8-ounce) Mediterranean-style white flatbread (such as Toufayan)
    • 1 tablespoon water
    • 1 teaspoon bottled minced garlic
