Orange & Cardamom Marmalade Parfait with Raspberries & Streusel

Ingredients

  • 2/3 cup water
  • 1 recipe Cream Cheese Mousse
  • 1 tsp. powdered gelatin
  • 1/8 tsp. ground cardamom; more to taste
  • 1/3 cup superfine sugar
  • 8 oz. fresh raspberries
  • 2/3 cup fresh orange juice
  • + 10 more ingredients
    • ½ cup plus 2 Tbs. granulated sugar; more to taste
    • Scant ¼ tsp. freshly ground black pepper; more to
    • 1 medium Minneola tangelo or thin-skinned orange
    • 2 oz. (½ cup) finely ground almonds
    • Scant ¼ tsp. ground ginger; more to taste
    • 3 Tbs. fresh lemon juice
    • Confectioners’ sugar
    • 4 Tbs. unsalted butter, softened
    • Big pinch salt
    • ½ cup all-purpose flour

Trim the ends of the orange, halve it lengthwise, and slice it thin (about 1/8 inch). Bring the water and sugar to a boil and add the orange slices; simmer for 5 min.
