Ingredients

  • 1 large egg
  • ¼ cup 2% reduced-fat milk
  • 2 cups all-purpose flour (about 9 ounces)
  • 1 tablespoon canola oil
  • 1 (8-ounce) carton orange fat-free yogurt
  • Cooking spray
  • ½ teaspoon salt

    • 1 cup sugar
    • 1 teaspoon baking soda
    • 2 teaspoons grated orange rind
    • 5 tablespoons flaked sweetened coconut, divided

Preheat oven to 350°. Combine 1 cup sugar, oil, and egg in a medium bowl, and stir with a whisk until smooth. Stir in milk and yogurt.
