  • 3 navel oranges
  • 1 cup heavy cream
  • 1 2 1/2-inch fluted round cookie cutter
  • 5 large egg yolks

    • ½ teaspoon vanilla extract
    • 1/8 teaspoon almond extract
    • ¼ teaspoon salt
    • Vegetable oil
    • 2 tablespoons light corn syrup
    • 2 tablespoons heavy cream
    • 1 instant-read thermometer
    • 1 cup slivered blanched almonds
    • ½ cup sugar
    • 1 ice cream maker
    • 3 ½ tablespoons unsalted butter
    • 2 teaspoons all-purpose flour
    • 1 pastry brush
    • ¼ teaspoon vanilla extract
    • 1/8 teaspoon salt
    • 5 ounces fine-quality bittersweet chocolate (not unsweetened)
    • 1 offset metal spatula
    • ½ cup English-style bitter orange marmalade
