Orange-Roasted Baby Carrots with Honey

  • 1 teaspoon finely grated orange peel
  • 1/3 cup fresh orange juice
  • 1 ½ pounds baby carrots
  • Fleur de sel or Maldon sea salt
  • 2 tablespoons extra-virgin olive oil
  • 1 ½ tablespoons honey

Preheat oven to 400°F. Arrange carrots in single layer on rimmed baking sheet. Add 2 tablespoons olive oil and orange peel; sprinkle with salt and pepper and toss.
