Orange Walnut Quinoa with Chickpeas and Mint

Ingredients

  • Toasted Walnuts with Coriander and Cumin:
  • ½ c chopped walnuts
  • ½ t olive oil
  • ½ t ground coriander
  • ½ t ground cumin
  • Qunoa:
  • 1 ½ c quinoa
  • + 12 more ingredients
    • Water
    • 1 t salt
    • 1 t ground cumin
    • ½ t ground coriander
    • ¼ t cinnamon
    • 1 c cooked chickpeas, or canned chickpeas (garbanzo beans), drained
    • ½ c chopped fresh mint
    • 2 scallions, finely chopped (both green and white parts)
    • 2 T freshly squeezed orange juice
    • 1 ½ T olive oil
    • 1 ½ T fresh lemon juice
    • 1 T finely grated orange zest
