Orange, white chocolate and cardamom langues de chat


  • 125g/4½oz unsalted butter, softened
  • 125g/4½oz icing sugar, portioned into 100g/3½ oz and 25g/1oz parts, both sieved
  • 25g/1oz ground almonds
  • 3 free-range eggs, whites only
  • 165g/5¾oz plain flour, sifted
  • 1 to 2 oranges (depending on size), zest only
  • 1 tsp orange extract
  • + 2 more ingredients
    • 200g/7oz white chocolate, finely chopped
    • 1 tsp cardamom pods, seeds only, ground
