Orange–White Chocolate Cheesecakes with Cranberry Sauce

Ingredients

  • 2 cups graham cracker crumbs (see notes)
  • 1⁄4 cup sugar (use sucanat)
  • 6 tablespoons (3⁄4 stick) unsalted butter, melted
  • 7 ounces good-quality white chocolate, chopped
  • 1⁄2 cup heavy cream
  • 3 (8-ounce) packages cream cheese, at room temperature
  • 3⁄4 cup sugar (try 1/3-½ cup honey or maple syrup)
  • + 10 more ingredients
    • 4 large eggs
    • Grated zest of 1 orange
    • 1⁄2 teaspoon vanilla extract
    • 1⁄2 teaspoon orange extract
    • Pinch of salt
    • 12 ounces fresh cranberries
    • 1⁄2 cup water
    • 1 cup sugar (pretty sure it would work with ½-¾ cup honey)
    • Grated zest of 1 orange
    • Oil for greasing the jars
