  • ¼ cup extra virgin olive oil
  • 1 egg white, beaten
  • ¼ cup dry white wine
  • Lemon wedges, for garnish
  • 1 teaspoon red chile flakes
  • 4 cloves garlic, thinly sliced

    • Salt and pepper, to taste
    • 2 (2 to 3 pound) orata, sea bream, or porgy, cleaned and gutted, left whole
    • 2 tablespoons freshly-squeezed lemon juice
    • 4 tablespoons extra-virgin olive oil
    • ½ bunch thyme leaves
