Orzo Salad with Tomatoes, Basil and Feta

Ingredients

  • 3 cup(s) orzo, uncooked
  • 3 tomatoes, diced
  • ¼ cup(s) Kalamata olives, optional
  • ¼ cup(s) chopped fresh parsley
  • ¼ cup(s) finely chopped fresh basil
  • ½ cup(s) olive oil
  • 1 ½ cup(s) crumbled Feta cheese
  • + 2 more ingredients
    • ½ cup(s) pine nuts, optional
    • ¼ cup(s) lemon juice

Bring a large pot of water to boil. Add orzo and cook for 6-8 minutes or until al dente. Drain and cool under cold running water. Pour cooked orzo into a bowl.
