Orzo with Garbanzo Beans, Goat Cheese, and Oregano
Ingredients
- 1 ½ cups orzo
- 1 15- to 15 1/2-ounce can garbanzo beans (chickpeas)
- 15 ounces log soft fresh goat cheese, crumbled
- ¼ cup olive oil
- 3 tablespoons fresh lemon juice
- 1 garlic clove
- 2 tablespoons fresh oregano
Cook orzo in large saucepan of boiling salted water until just tender, stirring occasionally. Drain orzo. Whisk olive oil, fresh lemon juice, and minced garlic to blend in large serving bowl.
