Orzo with Garbanzo Beans, Goat Cheese, and Oregano

Ingredients

  • 15 ounces log soft fresh goat cheese, crumbled
  • 1 15- to 15 1/2-ounce can garbanzo beans (chickpeas)
  • 1 garlic clove
  • 3 tablespoons fresh lemon juice
  • ¼ cup olive oil
  • 1 ½ cups orzo
  • 2 tablespoons fresh oregano

Cook orzo in large saucepan of boiling salted water until just tender, stirring occasionally. Drain orzo. Whisk olive oil, fresh lemon juice, and minced garlic to blend in large serving bowl.
