Oven-Baked Mexican Meatballs
Ingredients
- 1 large egg
- 2 tablespoons tomato paste
- ½ chipotle chili canned in adobo sauce, seeded and finely chopped
- 1 cup plain bread crumbs
- 2 teaspoons chili powder
- Salt and pepper
- 1 pound ground chuck

- 3 cloves garlic, finely chopped
- 2 tablespoons finely chopped cilantro
Adjust oven rack to middle position and preheat to 475°F. Line a rimmed baking sheet with foil.
