Ingredients

  • 4 (6 oz.) grouper, halibut or cod fillets (about 3/4 inch thick)
  • Lemon wedges, for serving
  • ¼ teaspoon black pepper
  • ½ teaspoon kosher salt
  • 1/3 cup milk
  • 1 tablespoon olive oil
  • Malt vinegar, for serving

    • ½ cup cornmeal
    • ¼ teaspoon dried thyme
    • 2 large baking potatoes, scrubbed
    • ¼ teaspoon black pepper
    • ¼ teaspoon hot chili powder
    • 2 tablespoons olive oil
