Oven-roasted Halibut with Cranberry Chutney

Ingredients

  • ½ cup fresh orange juice
  • 2 teaspoons olive oil
  • ¼ teaspoon kosher salt
  • 2 cups dried sweetened cranberries
  • ½ cup firmly packed light brown sugar
  • 4 (6-ounce) Alaskan halibut fillets (about 1 inch thick)
  • ¼ cup cider vinegar
  • + 5 more ingredients
    • 1 tablespoon grated orange peel
    • 2 tablespoons grated fresh ginger
    • ¼ teaspoon freshly ground black pepper
    • 1 jalapeño pepper, seeded and chopped
    • 1 medium onion, chopped (about 1 1/4 cups)

Combine first 8 ingredients in a medium saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat; simmer, uncovered, 30 minutes or until mixture thickens. Cool slightly.
