Ingredients

  • ¼ cup olive oil
  • 2-½ lb. baby potatoes, scrubbed
  • ½ tsp. freshly ground black pepper
  • 1 tsp. kosher salt

Mix the potatoes in a roasting pan with 1/4 cup olive oil, 1 tsp. kosher salt, and 1/2 tsp. freshly ground black pepper. Roast in a 375°F oven, stirring from time to time, until lightly browned and tender when pierced with a skewer, 30 to 40 minutes
