Oven-Roasted Sweet Potatoes and Onions


  • 4 medium-size sweet potatoes (about 2 1/4 pounds)
  • 2 medium-size sweet onions
  • ¼ teaspoon salt
  • 1 tablespoon olive oil
  • Vegetable cooking spray
  • ½ teaspoon garlic pepper seasoning

Peel sweet potatoes, and cut each into 2-inch pieces. Cut onions into 1-inch pieces. Toss together sweet potato, onion,oil, and seasonings in a 15- x 10-inch jellyroll pan coated with cooking spray. Bake at 425° for 35 minutes or until tender, stirring mixture occasionally.
