Oven Roasted Three Potatotes and Asparagus
Ingredients
- 2 tablespoon(s) chopped fresh parsley
- 8 asparagus spears, cut into 1 inch pieces
- 1 ounce(s) extra virgin olive oil
- 2 sweet potatoes or yams, partially boiled
- 2 Yukon gold potatoes, partially boiled
- Salt and pepper to taste
- 1 clove(s) minced garlic

Directions: Toss potatoes into a large bowl with salt and pepper and a little olive oil. Put onto sheet tray and roast in a 325 degree oven until golden brown, about 20 minutes.
