Oxtail Stew with Beans

Ingredients

  • 1 ½ cup(s) dry white beans (Navy, Great Northern, Cannellini, etc) OR 2 cans (approx. 16 oz) beans
  • 2 tablespoon(s) olive oil
  • 2 stalk(s) celery
  • 2 cup(s) red wine
  • 1 cup(s) water
  • 1 bay leaf
  • salt and pepper

    • ¼ cup(s) flour
    • 1 large onion
    • 4 clove(s) garlic (use more if preferred)
    • 1 teaspoon(s) dried sage, crumbled (optional)
    • 2 pound(s) ox tail, cut at the joints
    • 2 carrots
