  • 3 tablespoons yellow cornmeal
  • ½ teaspoon salt, divided
  • 3 cups cabbage-and-carrot coleslaw
  • 4 crusty sandwich rolls, halved horizontally (about 2 ounces each)
  • 1 pound catfish fillets, cut into 4 pieces
  • Cooking spray
  • ½ teaspoon black pepper, divided

    • ¾ teaspoon chopped fresh thyme
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon fat-free mayonnaise

Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Combine cornmeal, thyme, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a shallow dish, stirring well with a fork.
