  • 2 tablespoons olive oil, divided
  • 4 (6-ounce) grouper fillets (about 1 inch thick)
  • 1 tablespoon cornmeal
  • ¾ teaspoon salt, divided
  • 5 basil leaves
  • 1 red bell pepper, cut into 1-inch strips
  • 1 tablespoon red wine vinegar
  • + 6 more ingredients
    • ½ teaspoon dried Italian seasoning
    • 2 tablespoons all-purpose flour
    • Cooking spray
    • 12 plum tomatoes, halved lengthwise and cut into 1/2-inch slices
    • ¼ teaspoon freshly ground black pepper
    • 2 tablespoons chopped fresh basil (optional)

Preheat oven to 350°. Arrange bell pepper strips and tomato slices in a single layer on a jelly-roll pan coated with cooking spray; drizzle with 1 tablespoon oil.
