Pan-Seared Mahi-Mahi with Oranges and Olives

  • 1 tablespoon fresh chives
  • 2 tablespoons olive oil
  • ¾ cup green olives
  • 2 tablespoons butter
  • 1 large shallot
  • ¾ cup fresh orange juice
  • 1/3 cup fresh basil
  • + 4 more ingredients
    • ½ teaspoon crumbled saffron threads
    • 6 6-ounce mahi-mahi fillets (about 1 inch thick)
    • 3 oranges
    • 2 teaspoons finely grated orange peel
