Pan-Seared Scallops with Walnuts and Spiced Carrots
Ingredients
- 1 tablespoon Dijon mustard
- 1 tablespoon minced shallots
- 1 teaspoon grated orange rind
- ½ cup fresh orange juice
- 1 tablespoon olive oil
- 1 tablespoon honey
- Spiced Carrots

- 1 tablespoon minced chives
- 2 tablespoons coarsely chopped walnuts, toasted
- 1 tablespoon sugar
- 1 ½ pounds large sea scallops
- 1 garlic clove, minced
Combine first 7 ingredients in a small bowl. Combine half of orange juice mixture and scallops in a large bowl, stirring to coat; set aside. Set aside remaining orange juice mixture.
