Pan-Seared Scallops with Walnuts and Spiced Carrots

Ingredients

  • 1 ½ pounds large sea scallops
  • 2 tablespoons coarsely chopped walnuts, toasted
  • 1 tablespoon minced shallots
  • 1 tablespoon minced chives
  • 1 tablespoon sugar
  • Spiced Carrots
  • 1 tablespoon Dijon mustard

    • 1 tablespoon honey
    • ½ cup fresh orange juice
    • 1 tablespoon olive oil
    • 1 garlic clove, minced
    • 1 teaspoon grated orange rind
