Parsley, Capers, and Lemon Tuna Sandwich

Ingredients

  • 1 tablespoon capers, roughly chopped
  • ½ cup fresh flat-leaf parsley, roughly chopped
  • 2 6-ounce cans of tuna packed in water (drained)
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon lemon zest
  • ¼ teaspoon black pepper
  • 2 teaspoons lemon juice

In a medium bowl, combine the tuna, pepper, olive oil, parsley, capers, lemon zest, and lemon juice. Spread the mixture on your favorite bread or roll.
