- 1 cup ricotta cheese
- ¼ cup grated parmesan cheese
- 1 cup finely chopped flat-leaf parsley, plus ½ cup leaves
- 1 large egg
- About ½ tsp. kosher salt
- ¼ teaspoon pepper
- 48 round won ton wrappers (about 9 oz.)
