Pasta Primavera Salad


  • Dash of freshly ground pepper
  • ½ cup frozen English peas, thawed
  • 2 cherry tomatoes, quartered
  • ¼ cup julienne-sliced sweet red pepper
  • 3 tablespoons white wine vinegar
  • 4 ounces spaghetti, uncooked
  • 3 ounces fresh asparagus spears (about 3 spears)

    • 1/8 teaspoon salt
    • 1 tablespoon freshly grated Parmesan cheese
    • 1 teaspoon olive oil
    • Dash of garlic powder

Combine first 6 ingredients in a small bowl, stirring well. Set aside. Snap off tough ends of asparagus. Remove scales from spears with a knife or vegetable peeler, if desired.
